How About Some Hash Browns?


I found this recipe in my All New Ultimate Southern Living Cookbook. It's a great make-ahead recipe. Put together the evening before and pop into the oven the next morning. Too bad I didn't have the ingredients on hand, but will definitely plan for it next weekend.  This is a great brunch recipe, served with fresh fruit, juice, and hot, steaming coffee!

Hash Brown Breakfast Casserole

1 lb. ground hot pork sausage                                     1/4 c. chopped onion
2 1/2 c. frozen cubed hash browns                              5 large eggs, lightly beaten
2 c. shredded sharp cheddar cheese                            1 3/4 c. milk
1 c. all-purpose baking mix (Bisquick)                         1/4 tsp. salt
1/4 tsp. pepper
Toppings: green salsa or picante sauce, sour cream

Cook sausage & onion in large skillet over medium-high heat 5-6 minutes or until meat crumbles. Stir in hash browns, and cook 5-7 minutes, or until sausage is no longer pink and potatoes are lightly browned. Drain well; spoon into greased 13- x 9-inch baking dish. Stir together eggs and next 5 ingredients; pour evenly over sausage mixture. Cover and chill 8 hours. Bake, covered, at 350 degrees for 45 minutes. Uncover and bake additional 10 minutes or until a wooden pick inserted into center comes out clean. Let stand 5 minutes afer removing from oven. Serve with toppings, if desired.  Serves 8.

Yea, Alabama!!!

I learned the words to Bama's fight song while still a little girl. My brother Jim, who was seven years my senior, taught me the words and taught me to love this school. The song was composed by E.L.'Epps' Sykes in 1926. This site has a fascinating history of 'Yea, Alabama' http://bryant.ua.edu/includes/band/behindyeaalabama.pdf
How fitting that the song refers to the Rose Bowl, which Alabama had just won in January of that year, earning its first national championship. Now, in 2010, Alabama returns to the Rose Bowl once again, with the opportunity of capturing another national title. If you listen to the song it may be difficult to hear all of the lyrics--here they are: Yea, Alabama! Drown 'em Tide! Every 'Bama man's behind you, hit your stride! Go teach the Bulldogs to behave, Send the Yellow Jackets to a watery grave! And if a man starts to weaken, That's a shame! For Bama's pluck and grit Have writ her name in crimson flame! Fight on, fight on, fight on, men! Remember the Rose Bowl we'll win then! Go, roll to victory, Hit your stride, You're Dixie's football pride, Crimson Tide!

BCS Championship Game (2 days out)


Congratulations to my alma mater, The University of Alabama, for having an undefeated regular season. They will play Thursday night for the BCS Championship against the Texas Longhorns. It should be a fantastic game. Roll Tide Roll!!!

What Global Warming?

If you have checked a temperature map of the U.S. you will see that the entire country is being bombarded by frigid air coming out of Canada. Worldwide, many countries are seeing record low temperatures. Seoul, Korea has had the heaviest snowfall in 70 years. Three have died in Memphis from hypothermia. Ice build-up in New Jersey shut down a nuclear power plant, etc. It's 23 degrees in Mobile this morning, but the wind chill is 17 degrees. Two of my five outdoor kitties were accounted for this morning. I am hoping that the other three were too comfortable under the house to come out. They now have a very good shelter, complete with electric blanket, thanks to the 24-hour Walmart nearby.
